Welcome back to WIAW!
Did you miss it? I know I did. WIAW is the only reason I remember to take pictures of the amazing things I make and eat. I have been so lost without it.
I’m going to preface this post by saying this is not a normal day for me. If we’re being honest, I don’t really have any ‘normal’ days, and that’s probably what I like most about being a grad student – everyday is different. However, today was extra out of the ordinary.
Now, let’s get to what you really came here to see, the food.
Breakfast I 5:45am//Smoothie: Spinach, kale, Hemp Pro, mixed berries, frozen banana, 2 dates. Made this baby the night before because I knew I had an early morning ahead of me. This was the only green I was sporting for St. Patrick’s Day (why does it look brown in the picture?).
Breakfast II 10am//Rodgers porridge oats with a scoop of PB, strawberry compote, and a sliced banana. Waaaay later than I normally eat breakfast.
Lunch 12:30pm//Quiche + asparagus
Afternoon snack 1:15pm//Dried figs, walnuts, orange
Afternoon pick me up 3pm//Tim Hortons coffee (and I won a free one!) in seminar.
Pre-dinner snacking 5:30pm// Apple, cheese, wine. I was hangry when I got home and I went straight for the cheese…and the wine.
Dinner 6pm// Sautéed zucchini and eggplant, pan rushed chicken thighs, and roasted potatoes.
Post-dinner snack: I’ll probably snack on some chocolate or fruit. We’ll see how I feel!
