I stole my own veggie burger virginity by making Meghan Telpner’s veggie burger recipe from her book UnDiet. Not only was this the first veggie burger recipe I’ve ever made but I also got to try out my new food processor, which works like a charm! The recipe is chickpea based which worked well for me as I always have an abundance of chickpeas in my house.
I was a little preoccupied while making the burgers and I ended up putting in a little extra zucchini, ok it was one cup extra, but they still held together great and tasted amazing. The next time I make them I plan on spicing them up a bit more with some onion and garlic. I’ve been eating these guys as a ‘veggie patty’ for dinner and lunch. Accompanied with some quinoa and vegetables it makes a perfect meal.
