I just know I’m among a huge group of dip lovers.
If dip was a food group I would get my daily recommendation every. day. Tzatziki, guacamole, hummus, baba ganoush, the list goes on. Not only do I include dips in my daily meals but I am notorious for bringing dips as my contribution to potlucks or parties. I’m a firm believer that you can never have enough dip.
The best dips are always the easiest to make and the most versatile. They can be eaten with practically anything: on a sandwich, with pita bread, with veggies, with crackers – makes me hungry just thinking about it.
If you’re anything like me you’re always looking for a new way to dip and I’ve totally got you covered with this Creamy Lentil and Avocado Dip. Not only does it pack a nutritious punch with green lentils and avocado but you can eat it on nearly anything, it takes about 7 seconds to prepare, it’s boyfriend approved, and it tastes AMAZING.
How’s that for a good dip?
- 1 1/2 cups green lentils, cooked
- 1/2 avocado
- 1 clove garlic
- 1 Tbsp fresh cilantro
- Juice from 1/2 a lime
- Pinch of kosher salt
- Set up food processor with large bowl and standard S-blade.
- Add all ingredients to food processor and process until smooth.
- Serve with pita, veggies, crackers or whatever your heart desires!
