Lentils have been absolutely foreign to me for much of my adult life. I only started dabbling into the world of lentils when I started reading blogs and experimenting with plant based recipes. These babies have brought so many possibilities into my life including some solid plant based protein and many new ways to experiment in the kitchen.
Before we get into some lentil good-ness I want to break it down for you. There are two types of lentils – split and whole. The recipes I’m sharing with you today focus on the whole lentils (green and brown). Which can often be interchanged in recipes. You cannot, I repeat, cannot substitute red (or split) lentils for whole ones because their cooking times are very different.
You can find lentils where you would normally buy dried or canned beans – whole lentils also come both canned and dried. You can also find them in the bulk section! If you need some help in the cooking and preparing areas, I have you covered.
