Those boxes of baby spinach are my worst enemy. I buy one almost every week, but I can never seem to finish the container. Not eating it before it goes bad is so wasteful and it bothers me that I’m basically throwing my money away. To ensure I never have to throw out baby spinach ever again I did some brainstorming and I’ve come up with a few genius ways to use up the box before it goes bad!
Make a salad.
I’m starting you off easy with this one, but really this is one of the quickest ways to use up the spinach because you use so much when making a salad. Add other veggies and toppings like cucumbers, chickpeas, tomatoes, pumpkin seeds, carrots, snap peas, etc etc and top with some nice olive oil and balsamic vinegar. Making a salad like this not only helps use up the spinach but it also makes a great lunch when you’re in a pinch.
Use it as a bed.
Ok, not literally, but if you’re making turkey burgers for example – just serve it on a bed of spinach. It will not only look nicer, but it will have an additional nutritious punch. I also like to do this with eggs for breakfast too. I scramble them or just fry them (over hard – runny yolks are gross), and serve them on top of spinach to get some extra greens on my plate.
Throw it into a smoothie.
This is one of my favourites because you can pack away 2 huge handfuls if you try really hard. I like making mine with spinach, a slice of lemon (zest and all), a handful of frozen blueberries, hemp hearts, a banana, and some water or cold tea. Amaze.
If worst comes to worst and you really need to get rid of the stuff you can saute it in a pan with some cooking oil, garlic and a little lemon juice. Bonus because it will shrink to about a 1/4 of its original size but also taste amazing.
I suspect you should also be able to freeze it although I’m not sure on the technique!
